The history of the alfajores start in southern spain. They come from the 16th century and they are now a staple dessert from Argentina. This dessert is dulce de leche sandwiched between 2 shortbread cookies. These cookies are typically eaten with coffee.

I started these sandwiches by making the shortbread dough, which has to be refridgerated before you roll it out. Then I made the dulce de leche was a milk and sugar mixture that cooks on the stove for about an hour and a half. You have to watch the caramel closely after about an hour to make sure that the caramel does not burn. Some of my caramel did color differently. I will be trying this caramel again and updating my pictures at that point, but I do have pictures of what I did this time at the bottom of this post.

Cookie Recipe

12 oz unsalted butter

1 C sugar

1 tsp vanilla

3 1/2 C flour

1/4 tsp salt

Dulce De Leche recipe

4 C milk

1 1/4 C sugar

1/4 tsp baking soda

1 tsp vanilla
