So tonight is not about dessert, but it is about baking.  What do you do when there is not much food in the house but you need to make dinner?  Breakfast.  I made biscuits and gravy with country potatoes, eggs, and bacon.  Sometimes that is better than dessert.  And all I would have to do to make a dessert is to take some fruit and macerate them and make some whip cream.  Then I have a fruit shortcake dessert.  Yum.

The biscuit was originally a hard cookie type of pastry.  That is still what a lot of places around the country think of when they hear the word biscuit.  It also started out as a twice baked bread made of bread and water that was made into a paste.  American Pioneers were the ones that created “soda Biscuit”, which is closer to the type of biscuit that I made tonight.

Combine flour, sugar, salt and baking powderpress the butter into the flour mixture until it looks like bread crumbs then add the buttermilk knead the mixture until it all comes together press the dough out with your hands until it is a 1/2 inch thickcut the dough out into rounds and put on a baking sheet lined with a slip mat or parchment paper. Brush the tops with milkbake at 350 degrees Fahrenheit for 25 minutes cover in country gravy or fruit and whip cream.
