Chocolate mousse cake

10 oz bittersweet chocolate

4.5 oz unsalted butter

6 eggs, separated

3/4 C sugar

2 oz brandy

pinch of salt

preheat oven to 350 F and butter a springform pan and wrap the outside in foil

melt the butter and chocolate in a double broiler, then let cool

beat the egg yolks and 1/2 cup sugar, until light and thick, add the brandy and fully incorporate

mix the cooled chocolate and the egg yolk mixture until fully combined

beat the egg whites with a pinch of salt until frothy then add the rest of the sugar and beat until stiff peaks form

fold the egg white mixture into the egg yolk mixture until fully incorporated

pour into prepared pan and cook for 45 minutes in a water bath

when a hard crust has formed on the top, remove from the oven and let cool completely at room temp

then refrigerate
